1 litre fish stock
1 stalk lemon grass
1 tsp grated fresh ginger
2 tsps fish sauce
250g soba noodles
2 200g salmon fillets
2 handfuls snow peas
light soy sauce
2 tbs coriander
1 lime , quartered

Serves 2 adults

Step 1

Bring stock,ginger and fish sauce to boil and simmer for 5 minutes then add noodles and cook till ready. Remove noodles and divide between two bowls.

Step 2

Add salmon fillets and snow peas to broth and cook for 2-3 minutes. Ladle into the bowls, add soy sauce, and garnish with coriander and lime wedges.
