180g of Hakubaku Soba noodles
150g snow peas
600g skinless salmon fillets
1/4 cup sesame seeds
2tsp coconut oil
1/2 continental cucumber de-seeded, halved and slice diagonally
1/2 red onion thinly sliced
2Tbs lemon juice
1Tbs rice wine vinegar
2 tsp grated ginger
1tsp sesame oil
1/2 tsp caster sugar
Serves 3 adults
Cook noodles in boiling water as per packet instructions adding the snow peas for the final minute. Drain and refresh in cold water.
Season the salmon and press the sesame seeds into both sides. Heat pan and add coconut oil. Cook salmon turning when seeds are brown - about 4 mins each side in medium heat pan. Remove from pan and rest for 2 mins then slice.
Place noodle mixture and cucumber, onion into large bowl. Dress with 3/4 of the dressing.
Place noodle mixture on plates and top with salmon and remaining dressing!
